Olives produce more than just oil (DE)

Olive oil tastes good and is healthy — and global demand is increasing. “More than two million tons of olive oil is produced each year in Europe,” says Dieter Bryniok. The most important producing country is Spain, followed by Italy and Greece. Unfortunately, the olive oil boom has considerable adverse effects on the environment as waste is generated in large quantities; in the Mediterranean region, more than 30 million tons a year is produced in olive press residues, rinsing water and olive leaves.
