Bio-energy from sauerkraut juice (Germany)

Sauerkraut is as much a part of Alsace as its storks and its wine route. However, this culinary speciality is not without its problems: up to now, the juice resulting from the production process had to be disposed of in a costly procedure. A pilot project is providing a remedy by turning this waste product into energy.
